OPERATION AND TECHNICAL CHARACTERISTICS

The 5 kg kneading machine with 10 Speeds and Reverse Rotation HH by Alfonso forni, with fixed spiral, gives you the possibility to knead up to 5 kg of dough (3 kg of flour + 2 litres of water), with a minimum dough weight of 300 g. It is perfect for all types of dough, even those with high hydration because it is designed to handle doughs with high water concentration (such as 80%, 90% and up to 95%) thanks to the possibility of increasing the speed of the spiral, unlike the normal model which can handle up to 75% water. It is the perfect choice for pre-doughs as well as doughs for bread, pizza, biga, etc..

The frame is made of thick steel: this drastically reduces vibrations during operation. It is also equipped with a chain drive plus two high-strength belts: this makes our kneading machine silent and resistant.

To ensure the health of our customers and compliance with current regulations, every organ in contact with foodstuffs has been made of stainless steel:
