Suitable for professional use

The oven is constructed with a load-bearing structure in thick-gauge stainless steel (between 3 and 6 mm) and components selected to ensure daily reliability in pizzerias, restaurants and high-volume food service establishments, whilst maintaining a price accessible to a wide range of customers. Structure and insulation

Inside, the robust structure is made of AISI 304 stainless steel with a thickness of between 3 and 6 mm, ensuring structural stability even during prolonged operating cycles at high temperatures. The insulation system incorporates three thick layers of high-density fibre-ceramic, optimised to maintain constant temperatures by reducing heat loss—a crucial factor in a professional environment.

External cladding

The external cladding, made of galvanised steel with a red powder-coated finish, combines durability and practicality. The surface treatment guarantees:

Professional hob

The hob features the EXTRA-HARD REFRACTORY BISCOTTO as standard, specifically developed for professional use:

  • Calibrated porosity for uniform heat distribution
  • Certified resistance to intensive thermal cycles

The base of the hob features a triple layer of Skamotec, a 9 cm calcium silicate honeycomb structure, which guarantees:

  • Constant temperature maintenance during intensive use

    Gas supply 

    Available in two configurations:

    • LPG: the ideal choice if you wish to use a cylinder. The kit includes the LPG burner with safety valve: (670mm Ø51, 30kW) with a pre-calibrated pressure regulator to ensure an excellent consumption-to-power ratio, plus a complimentary 1.5 metres of blue rubber hose.
    • Natural gas: recommended for those intending to use mains gas from the domestic network, the natural gas burner with safety valve (670mm Ø51, 30kW) is supplied with a 1/2" male connection.

    To ensure correct operation and compliance with current regulations, the oven must be connected to a flue with an external exhaust, sized and constructed in accordance with technical and local requirements. It is not necessary to install dedicated extractors or extraction systems, unless otherwise specified by the relevant authority or the system designer; for any queries regarding the flue, the gas connection or the installation configuration, our customer service team is at your complete disposal to provide technical support and operational guidance


    This combination of materials and technical solutions allows the oven to reach and maintain operating temperatures of 500°C in approximately 5 minutes, ensuring consistent performance throughout entire working sessions in a professional environment.

    Cooking chamber

    High-quality food-grade refractory bricks are installed at the base of the cooking chamber, making the oven perfect for cooking dishes in direct contact, such as pizza and bread, as well as providing an ideal surface for baking trays. Measuring 80 cm wide, 86 cm deep and 30 cm high, the cooking chamber offers a very large working space, whilst the 78 cm wide oven door facilitates the handling of food during cooking. This configuration allows for the simultaneous cooking of four standard-sized pizzas in gas mode, with a production capacity exceeding 80 pizzas per hour under optimal conditions.

    Design and configuration

    The semi-circular design of the chamber, combined with the dual-burner system, ensures uniform heat distribution; furthermore, the arrangement of the burners on both sides optimises heat distribution, guaranteeing constant temperatures across the entire cooking surface. It is important to note that when using the wood-fired mode, it is not possible to cook four pizzas simultaneously, as space must also be left for the wood required to ensure continuous cooking. Please note that the oven can also be purchased without burners, with the sole function of direct wood-fired cooking.

    Burner holder system

    The dual-fuel system utilises two burner-holder drawers, positioned on the right and left sides of the chamber. Each drawer is fitted with a lifting mechanism and can be easily positioned on dedicated supports during gas use, ensuring a quick transition between cooking modes. The steel lids of the drawers serve a dual purpose: they act as flame deflectors, optimising heat radiation towards the refractory bricks, whilst simultaneously protecting the internal structure of the chamber and the dome. This solution, combined with the structural robustness and efficiency of the dual-burner system, makes this oven ideal for continuous cooking operations, ensuring reduced heat recovery times and consistent performance. The oven retains its installation versatility, adapting to both indoor and outdoor spaces, whilst always guaranteeing maximum performance during intensive use.
