Thermal insulation is provided by a layer of high-density Fibro Ceramic that completely envelops the oven dome, optimising heat diffusion and minimising heat loss.

For the exterior, we offer two premium options: 304 stainless steel or epoxy powder-coated galvanised sheet metal, both of which provide superior protection against the elements and a premium aesthetic finish.

The heart of the oven is made of high-quality refractory bricks, available in two exclusive variants:

  • 2 cm Sicilian clay: renowned for its optimal porosity and heat retention capacity.
  • 3 cm Sorrento clay (Casapulla type) : offers superior thermal resistance and exceptional baking performance.

A key element is the 3 cm insulating layer of Skamotec, a honeycomb calcium silicate strategically placed under the bricks. This high-tech component ensures optimal thermal insulation of the cooking surface, maintaining a constant and uniform temperature throughout the oven's entire service life.

To complete the firing kit, we include a professional chimney and chimney pot as a free gift , which guarantee the system efficient and safe smoke evacuation in line with the highest industry standards.

The external dimensions of the oven have been optimised to guarantee maximum versatility of positioning: 92 cm wide, 120 cm deep and 55 cm high, with an addition of about 60 cm for the chimney system, which includes a 50 cm flue and a professional chimney. This compact yet powerful design allows the oven to be installed in a variety of environments, both indoors and outdoors, fitting perfectly into domestic and professional settings.

The cooking chamber, a veritable culinary workshop, boasts impressive dimensions: 83 cm wide (plus 15 cm hopper), 98 cm deep and 24 cm high. This generous space comfortably accommodates six standards, offering an estimated production capacity of 65-70 pizzas per hour. However, to ensure continuous, quality baking, it is not possible to bake six pizzas at the same time, as there must also be space for wood.

Instructions for use and maintenance

To obtain the best results with your Alfonso 6 Pizze oven, it is essential to follow some simple instructions for use and maintenance.

To light the fire, we recommend that you:

  • Place pieces of dry wood in the centre of the oven, followed by slightly larger pieces of wood and make them into embers. Once the bricks have heated up, move the embers to the right, left or bottom side, depending on your preference. It is recommended to use a flame guard bar to compact the embers. At this point, the oven will be ready to cook baked pasta, meat and all baked dishes.

  • Alternatively, put chunks of dry wood such as twigs in the centre of the oven and turn them into embers. After the bricks have heated up, pull the embers towards the oven mouth, and the oven will be ready to bake bread. In this mode, it is advisable to buy the closerna door.

  • Another option is to put some pieces of dry wood in the middle of the oven, then some slightly larger pieces of wood and make them into embers. After the bricks have heated up, move the embers to the right, left or bottom side, depending on your dexterity. It is advisable to use a fireguard bar to compact the embers. Place a good piece of wood on the embers to start the flame, and the oven will be ready to make pizzas.

The oven requires minimal maintenance inside the cooking chamber due to its self-cleaning capability. Every time it is turned on, the oven burns off any food residue, keeping the bricks clean through sterilisation. To ensure a long life of the oven, it is necessary to regularly remove ash and clean the steel cavern of accumulated soot. It is important to note that although the bricks may absorb moisture and take longer to heat up, this does not affect the oven's overall performance.
